five days a week…

i pack the SAME lunch for E. she’s not a picky eater, but somehow i’ve lost lost all creative juices when it comes packing a toddlers lunch. so, every night, i make her a peanut-butter and jelly sandwich, cut into 9 pieces, and of course, a side of fruit. fruit, ah, there’s the variety. one day it might be a banana and peaches the next. anywho, after the first few weeks of school, her lunch began coming home in a little plastic bag. so naturally, i thought it must be leaking and they put it in bag so her backpack didn’t get wet… next day, i sent a box of ziplock bags and told her teacher i was sorry to have kept using all her bags. looking a little confused, i asked about the lunch situation. her response, oh, that was so eden could carry her own lunch to the lunch room. stupid mom… didn’t even send a lunch box her child could carry herself:) and of course, that was all i needed to get home and break the sewing machine out.

insert new lunch bag:) she pretty much loves and it and wants to carry it around everywhere. score… points for mom… maybe i’m not as stupid as i think:) i didn’t follow any directions, just made it up as i went – i wanted something that would fit her froggie bento box. while it turned out okay, i’d like to create a lined one that is more sturdy. maybe then, i’ll take some photos and do a tutorial? hhhummmm… sounds like a good idea.

first attempt at holiday crafting…

was a complete failure:(

remember this post where i wanted to make these shamrocks, but didn’t have enough time… failed.

found this recipe for rainbow cupcakes, but didn’t have red food coloring. there was no way i was going to make it to the store to get some… failed.

found this recipe for shamrock cookies, made them, then burnt them – turning them brown… failed.

finally decided to go with what i know and made rice krispie treats with green food coloring. yummy… except for the fact that eden wouldn’t touch them… again, failed!

maybe i can do better with easter, which is surprisingly not to far away. given my track record, i guess i better get started now.

Chicken and Broccoli in a Crescent Roll

This recipe is too good not to share. I’ve motified it a bit over the years and I’m not sure the original source, so I’m going to claim this version of my own! Its so yummy – E almost gobbled up a whole one by herself!

2 chicken breasts, cooked and cubed

4oz cream cheese

2 c. broccoli (steamed)

2 Tbsp butter/margarine

1 pkg refrigerated crescent rolls

salt and pepper to taste

milk

Lay out crescent rolls in pairs of two triangles (making a rectangle) – pinch together seams : you will end up with 4 flat pieces of crescent roll.

Dump all the remaining ingredients in a food processor – process until chicken is shredded (Add enough milk to ease the blending process 2-3 Tbsp approx).

Spoon chicken/broccoli mixture on crescent roll squares (you may have extra filling). Pull up crescent rolls corners and pinch together.

Bake at 350 for 25-30 minutes.
